How to Take Care of a Cast Iron Skillet

Caring for a cast iron skillet comes down to one thing: keeping the seasoning layer intact. That layer is polymerized oil, baked onto the iron until it turns into something closer to plastic than fat, and it is what makes the pan release food, resist rust, and outlast whoever bought it. Strip it away and every complaint people have about cast iron — sticking, rust, a gummy residue — comes from the same place.

Why the seasoning layer decides everything

Raw cast iron is not smooth. Sand-cast or machined, its surface is full of microscopic pits, and food snags in them the same way a shoe catches on rough pavement. Seasoning fixes that by filling the pits with plastic, not by coating the pan the way non-stick spray does.

Heat a thin layer of oil past roughly 450°F (232°C) and its fat molecules stop behaving like fat. They cross-link into long chains — polymerize — and the result hardens into a thin, glassy solid bonded to the iron underneath. That solid is smooth, it does not dissolve in water, and it physically blocks oxygen from reaching the metal. One coat does almost nothing. Twenty thin coats, each fired past that temperature and each thinner than the last, build a surface that stops looking like iron and starts behaving like a nonstick pan that also happens to sear.

Why the pan sticks anyway

A pan that sticks in one spot and releases fine everywhere else is telling you exactly where the seasoning wore through — usually the center, where a spatula scrapes and a burner runs hottest. Bare iron does not hold food back the way the polymer coat does; it lets proteins bond directly to the metal surface.

Sticking that happens all over, even on a well-kept pan, is usually a heat problem rather than a seasoning one. Add food to a skillet that has not come up to temperature and it sits in contact with the metal long enough to bond before a crust forms underneath. Wait for the oil to shimmer, not smoke, and the food browns and lets go on its own — the same way a well-seared steak stops sticking to stainless once the crust is done.

Why it rusts, and why soap isn't the cause

Rust is iron reacting with oxygen and water to form iron oxide, and it needs bare metal to start. A fully seasoned pan does not rust because the polymer layer keeps water off the iron entirely; a chipped or scoured one rusts fast, especially if it air-dries instead of getting toweled off.

Dish soap gets blamed for this, and it is almost never the reason. Modern soap is a surfactant — it lifts grease, it does not dissolve a polymer. The soap that actually stripped seasoning was lye-based, common decades ago and mostly gone from kitchens now. What does strip seasoning is a scouring pad or steel wool, which removes the coat the same way sandpaper would: by grinding it off, not by dissolving it. Scrub off the polymer and the bare iron underneath is exactly what rusts.

Why a hot pan can crack under cold water

Cast iron is brittle in a way steel is not. Its microstructure is full of graphite flakes, and those flakes concentrate stress instead of letting the metal flex around it — which is exactly what makes the pan hold its shape under a hot broiler but also what makes it a poor candidate for sudden temperature swings.

Run cold water into a skillet straight off the burner and the surface that hits the water contracts far faster than the iron still holding heat an inch below it. That mismatch puts the two layers under opposing stress, and if it exceeds what the graphite structure can absorb, the pan cracks — sometimes audibly, sometimes just a hairline that shows up as a leak weeks later. Letting the pan cool most of the way before it touches water avoids the whole problem.

Why is my cast iron skillet sticky after I season it?
Too much oil was left on before firing. A thick layer traps the outer part before it can fully polymerize, so it stays soft and tacky instead of turning solid. Wipe the pan almost dry — barely a sheen — before it goes in the oven, and the coat hardens all the way through.
Is it okay to put a cast iron skillet in the dishwasher?
