Raw chicken is good in the refrigerator for one to two days, not because it is more fragile than beef, but because of how much of it is exposed surface. A cut-up bird has skin, joints, and cut faces across most of its area, and bacteria live on surfaces — they cannot get inside intact muscle. Cold slows their growth. It does not stop it, which is the entire reason the clock is that short.
Everything below — the freezer numbers, the thawing rules, what a bad batch actually smells like — comes back to that one fact: the bacteria were never sealed inside the meat to begin with.
Why raw chicken only gets a day or two
Beef usually arrives at the store as a thick, largely intact cut. A three-pound roast has one flat face of exposed surface and a layer of connective tissue holding the rest closed, so most of the meat that could carry bacteria is sealed inside muscle a microbe cannot swim through.
A chicken carcass does not work that way. Even a whole bird is covered in skin over nearly its entire surface, and by the time it reaches a store it has usually been cut into parts — breasts, thighs, wings — each cut adding more exposed surface per pound of meat. Processing adds to the load directly, too: evisceration opens the body cavity, and Salmonella and Campylobacter that live in a bird's gut end up on the surface of the carcass during that step, not only wherever it happened to touch a cutting board later.
None of that makes chicken dangerous to cook. It makes the safe window shorter, because refrigeration slows bacterial growth rather than stopping it, and chicken starts with more bacteria in more accessible places than a beef roast does. Ground chicken follows the same one-to-two-day rule as ground beef, for a related reason — grinding takes whatever sat on the surface and mixes it through the whole batch.
How long chicken keeps, by form
These are working numbers for chicken kept cold and sealed, not the outer edge of when it turns dangerous.

Frozen chicken does not become unsafe once it passes those freezer numbers. It has just been losing moisture the whole time, and past a certain point cooking will not get that back. That is a different problem from the refrigerator numbers above, where the ceiling really is safety rather than quality.
Thawing it without giving bacteria a head start
Leave a frozen chicken breast on the counter and the outside crosses into the danger zone — above 40°F (4°C) — long before the center is anywhere near thawed. Surface bacteria that were dormant in the freezer wake up and start multiplying while the middle is still ice, so by the time the whole piece is usable, the outside has spent hours in conditions it should have spent minutes in.
The refrigerator is the slow, safe default: budget about a day for a package of parts, longer for a whole bird. A faster option is a leak-proof bag submerged in cold water, changed every 30 minutes so it stays cold, cooked as soon as it is thawed. The microwave works too, on the same condition — cook it right away, because microwave thawing warms the outer layers well past what's safe to leave sitting.
Whichever method you use, keep raw chicken on a plate or in a container with sides, on the lowest shelf if it is sharing space with anything else. It sheds liquid as it sits, and that liquid carries whatever was on the surface to begin with — a drip onto something eaten raw below does more to make someone sick than the chicken itself usually will.
What actually means it has gone bad
Fresh raw chicken ranges from pale pink to a slight yellow tint depending on what the bird ate, and that variation is not a warning sign. What is: a dulled, grayish cast, a smell that has turned sour or ammonia-like instead of faintly meaty, or a surface that feels slick rather than just moist. That slickness is a biofilm — a colony of bacteria dense enough to have built a shared, sticky coating — and if you can feel it, the count on the surface is already high enough to matter.
Freezer burn looks alarming and is not the same problem. It shows up as dry, leathery, grayish-white patches where ice has sublimated straight out of the meat's surface into the surrounding air, taking moisture with it and leaving the exposed fat to oxidize. It tastes duller and it is not dangerous. Trim the patch off and cook the rest.
