Two different jobs share this category. Appetizers open a meal and are judged by how well they hold an appetite without killing it. Snacks answer hunger at four in the afternoon and are judged by how fast they arrive. Work out which one you need before you scroll.
For entertaining, the useful question is not what tastes best but what can be finished early. Dips, marinated vegetables, cured things and boards can all be done hours ahead and improve while they sit. Anything fried or pastry-based has a short window, so pick at most one hot item per party and build the rest around it. Three hot appetizers means you spend the evening in the kitchen.
Season appetizers harder than you would a main course. They are eaten in single bites with no bread or rice to carry them, so they need more salt and more acid to register. A squeeze of lemon over a platter just before it goes out does more than any amount of garnish.
On quantities: for a pre-dinner spread, plan three or four pieces per person. If the appetizers are the meal, plan on ten to twelve and make sure one of them is substantial.
