Two cartons of heavy cream on the same shelf can have wildly different shelf lives, and it has nothing to do with the cow. A carton marked only pasteurized is usually good for five to seven days after opening and one to two weeks past its date unopened; one marked ultra-pasteurized, or UHT, can last three to four weeks after opening and a month or two past its date, because it was heated hotter before it ever reached the carton.

A bowl of whipped cream is already halfway to being spoiled the moment it leaves the mixer. It just fails by going flat before it fails by going sour.
Why one carton outlasts another
Standard pasteurization heats milk to about 161°F (72°C) for fifteen seconds. That's enough to kill the pathogens that matter, but a handful of heat-tolerant bacteria and their spores ride it out. Ultra-pasteurization pushes the same milk to around 280°F (138°C) for a couple of seconds instead. The higher heat, even applied briefly, wipes out nearly everything that survives standard pasteurization.
Fewer survivors means a longer runway before anything left alive can multiply enough to sour the cream. That's the whole difference. It isn't fresher cream, richer cream, or better cream — it's cream that started its shelf life with less competition.
What curdled cream actually means
Cold doesn't kill the bacteria that make it through pasteurization. It slows them down. At a genuine 40°F (4°C) or below, they multiply slowly enough that the cream stays sweet for days. A shelf on the fridge door swings several degrees warmer every time it's opened, and that's often enough to let them build up faster than you'd expect from the date on the carton.
Given enough time, those bacteria convert the lactose in the cream into lactic acid. The acid drops the pH until the milk proteins lose their shape and clump together — the graininess and sharp, sour smell people call curdling. That smell is the test. If it's sour, sharp, or faintly cheesy, or the texture stays grainy after a stir, it's done. Pitch it.
Why cream can look broken and still be fine
Heavy cream is an emulsion: billions of fat droplets suspended in water, each one wrapped in a thin membrane that keeps it from merging with its neighbors. That membrane is what makes whipping possible — it lets air get folded in without the fat just clumping into butter on the spot.
Extreme cold tears that membrane. In a freezer, or against the back wall of a fridge where cold air blows directly over the carton, ice crystals form and shove the fat droplets together until they fuse. Thaw it out and the cream looks split, watery, sometimes grainy. Nothing in that process involves bacteria. It's mechanical damage to an emulsion, not spoilage, and cream in that state still smells and tastes normal — it just won't whip anymore. Cook with it instead.
