Dill's aroma lives in oil droplets stored inside the leaf, light enough that they start drifting into the air the moment the leaf gets bruised or heated — so the only timing that reliably works is stirring dill in after the pan comes off the heat, not while the dish is still cooking.
Why the flavor is already finished before you touch it
Most of what makes an ingredient taste like itself starts as something else. Garlic is odorless until an enzyme meets a compound the knife just separated; onion's sting only exists after cutting sets off a similar reaction. Dill skips that step. Its aroma compounds — chiefly a cyclic ether called dill ether and a monoterpene called α-phellandrene — sit fully formed inside small oil-holding pockets in the leaf, finished products waiting to be let out rather than raw material waiting to react.
That's the whole reason chopped dill smells stronger than an intact sprig. Nothing is being started. Something sealed is just being opened.
Why heat empties the leaf instead of deepening the flavor
Both of those compounds are light — small molecules with a low boiling point, which chemists call volatile — and volatile compounds leave a surface faster as that surface gets hotter. A raw sprig loses a slow trickle of aroma into the room at all times, which is why a bunch of dill smells like something even sitting in the fridge. The same leaf dropped into a simmering sauce loses that aroma at a much higher rate, and steam carries it off the pan before it ever reaches a fork.
Nothing burns or turns bitter in the process. It just leaves. That's a plainer problem than a chemical one, and it has a plainer fix: add the dill last.
Why dried dill isn't a weaker copy of fresh
Drying a bunch of dill does roughly what cooking does, only slower and at a lower temperature — it drives off the volatile fraction. It doesn't drive it off evenly, though. The lightest compounds go first, and dill ether is among the lightest, so a batch of dried dill weed has already lost more of that specific compound than of the heavier ones that linger longer. What's left is a real herb, not a fake one, but a flatter one: more one-note, missing the top layer that makes fresh dill smell bright instead of just green.
A common starting substitution is one teaspoon of dried dill for every tablespoon of fresh, nudged up because the flavor reads thinner gram for gram. That's a conversion between two related, separate ingredients — not a rehydration.
Why dill seed tastes like a different plant than dill weed
The same plant, Anethum graveolens, produces dill weed from its leaves and dill seed from its flowers, and the two organs don't stock the same oil. Leaf tissue is built around dill ether and α-phellandrene. Seed tissue is built around carvone, a different monoterpene entirely — and carvone happens to be the same compound that gives caraway seed its flavor, which is why a jar of dill seed smells closer to caraway than to a fresh sprig of dill.
That isn't drying or cooking turning one ingredient into another. It's two tissues on one plant running two different recipes for which oil to store.
