French Meringue vs Italian Meringue: Syrup Cooks the Whites

It dissolves into the whites' own moisture as the beaters keep working, and the syrup that forms thickens the liquid between bubbles enough to slow it from draining out. That's a real stabilizer, but a mechanical one. The protein net underneath is still soft, still raw, still capable of collapsing under its own weight if it sits too long. Where French meringue's sugar dissolves gradually and does nothing thermal, Italian meringue's syrup arrives hot enough to cook a portion of the surrounding egg proteins on contact — the same instant coagulation that happens when hot liquid hits raw egg yolks in a custard. By the time the syrup is fully incorporated and the foam has cooled, a meaningful share of that protein network is already heat-set, not just mechanically thickened. Combined with sugar that's fully dissolved from the start, with no undissolved crystals left to pull moisture out later, the result holds its shape at room temperature for hours. That's the foam used for Italian buttercream, folded into a mousse, or piped onto a pie and browned with a torch instead of an oven — because it doesn't need one.

Reach for French meringue anywhere the meringue is headed into an oven anyway — a soufflé base, a pavlova, meringue cookies. Reach for Italian meringue anywhere it has to hold its own weight without more heat: piped onto a lemon pie and browned with a torch, folded into a mousse, or beaten into butter for buttercream.

Can French meringue be used in place of Italian meringue for buttercream?
No. French meringue is a raw foam that starts deflating and weeping within a couple of hours, and folding softened butter into it just collapses the air out faster. Italian meringue's egg whites are already partly cooked by the hot syrup, which is what lets the foam hold its structure once butter gets beaten in.
Why does my baked meringue weep or bead with liquid?
It usually means the sugar never fully dissolved before baking. Undissolved granules pull moisture out of the meringue by osmosis as the oven heats it, and that moisture beads on the surface or pools underneath.
