Melt equal weights of fat and flour together and cook the paste until it smells right, and you've made a roux — the thickener underneath béchamel, gravy, étouffée, and gumbo, each one stopped at a different point along the same process. Where you stop decides almost everything: how much the roux thickens, what it tastes like, and how long you'll be standing at the stove stirring it.
Equal weights, not a fixed batch size
A roux is built on a 1:1 ratio by weight — a pound of flour to a pound of fat, or four ounces to four ounces, scaled to whatever a recipe needs. Home measurements by volume get close enough for most kitchens, since a tablespoon of butter and a tablespoon of flour land near enough in weight to behave the same way. What matters is keeping the two in step. Run short mid-batch and add more of each together, and the roux keeps working the same way it did before; add flour alone and it turns pasty and starts tasting raw.
The tradeoff a roux is built on
Cook a roux longer and it turns darker, tastes more like something, and thickens less. All three happen for the same reason. Flour's thickening power comes from long starch chains that swell and trap water when they hit hot liquid — that's gelatinization, the same mechanism behind a simmered pot of rice. Heat also breaks those long chains apart, a slower process called dextrinization, and a broken chain has less structure left to trap water with. The nutty, toasted flavor that a browned roux is prized for is the byproduct of that breakdown, not a separate thing happening alongside it. You cannot have the deep flavor of a dark roux and the thickening strength of a pale one in the same spoonful. Pick one.

A roux this dark has shed so much thickening power that gumbo recipes lean on file powder or okra to pick up the slack, and they still call for a far larger batch of roux per quart of stock than a white sauce ever would.
Melting, whisking, and reading the pan
Melt the fat first, then whisk in the flour all at once so it hydrates evenly instead of clumping into dry pockets. From there it's continuous stirring over medium-low heat — a roux left alone for even thirty seconds can scorch, and a scorched roux tastes bitter enough that there's no saving it, only starting over. Color is the clearest signal of where you are, but smell tells you sooner: raw flour smells sharp and starchy, and that sharpness disappears well before the color visibly shifts. Once it's gone, you're in blond territory whether the roux looks any different yet or not.
Why gumbo roux is oil, not butter
Butter's milk solids start scorching around 300°F (150°C), which is well short of the color a dark roux needs. Push a butter roux that far and the butter burns before the flour finishes browning, leaving a bitter, blackened mess instead of a deep reddish-brown one. A neutral oil holds up past 400°F (204°C) with nothing in it to scorch early, which is the only reason a forty-minute dark roux is possible at all. Butter still makes sense for a blond or light brown roux, where the cooking time is short enough that its milk solids never get the chance to burn.
Combining hot with hot is the actual mistake
The advice to add cold liquid to a hot roux, or hot liquid to a roux that's cooled, isn't a superstition. When both are hot, the outer layer of every starch granule gelatinizes on contact and seals almost instantly, trapping unhydrated starch inside a skin that liquid can no longer reach — that's the lump. A temperature gap between the two slows that first instant of swelling just enough that steady whisking can work the granules apart before they seal. If lumps still form, they're usually recoverable: strain the liquid through a fine sieve, or keep it at a simmer with hard whisking, and most of the trapped starch hydrates out over the next few minutes.
