What's the Ratio for Bread Dough

Bread dough is flour and water joined into a stretchy protein network strong enough to trap gas, and everything else in the mix — salt, yeast, sometimes egg or fat — is scaled off flour's weight rather than measured on its own. Why water is what gluten actually needs

Wheat flour carries two proteins, glutenin and gliadin, that do nothing until water reaches them.
