A grill has no thermostat. Charcoal glows past 700°F and a gas burner isn't far behind, so food sitting four to six inches above it has almost nothing standing between it and that heat except distance and time. That's the entire method: build two different heat zones on the same grate, one hot enough to scorch and one cool enough to just finish cooking, and move food between them instead of trying to turn the fire down.
Why the lid turns a grill into an oven
Heat off an open grill only comes from below, and most of it escapes straight up past the food into the air. Close the lid and that changes: hot air gets trapped around the food instead of drifting off, and heat starts reaching it from the sides and top as well as the bottom. A closed grill over the indirect side of the fire behaves like a 300°F to 350°F oven, not a fire pit — which is why a whole chicken or a rack of bone-in thighs needs the lid down for most of its time on the grate, and a thin cut over direct heat usually doesn't need it at all.
Setting up direct and indirect zones
On charcoal, this means banking the lit coals to one side of the kettle and leaving the other side bare. On gas, it means lighting one or two burners and leaving at least one off. Either way you end up with a hot zone directly over the fire and a cooler zone beside it that only gets heated air, not flame. Everything about grilling well comes down to choosing which zone a given piece of food needs and for how long, rather than picking one heat and leaving everything on it the whole time.
Why thin food goes direct and thick food finishes indirect
A burger patty or a piece of asparagus is thin enough that the center catches up to done in the same few minutes the surface takes to brown, so it can sit over direct heat from start to finish. A pork chop or a bone-in chicken thigh can't do that — direct heat browns the outside in a couple of minutes, long before the inside is anywhere close to cooked, and leaving it there just burns the crust while the middle stays raw. The fix is the same one a stovetop sear-then-oven method uses: brown the surface fast over direct heat, then move the piece to the indirect side and let the closed lid finish the interior at a gentler, more even temperature.
Flare-ups and the two seconds you have
Fat rendering out of meat drips onto the coals or the burner and ignites the instant it lands, which is what a flare-up actually is — not the food catching fire, but the fat that came off it. It happens fastest under fatty cuts like chicken thighs or a well-marbled steak. The fix takes seconds: slide the food to the indirect side of the grate until the flame dies down, then move it back. Reaching for a spray bottle instead just throws burning fat further across the grate and does nothing to stop it from relighting the next time fat drips.
Why the grate has to be hot and oiled before food touches it
A cold or lukewarm grate lets raw proteins on the food's surface bond directly to the metal, which is what sticking actually is. A hot, oiled grate slows that bond down long enough for the surface to start browning instead, and once a real crust has formed, the same proteins that were sticking pull back from the metal on their own. That's why food that's ready to flip lifts off the grate with almost no resistance, and food that tears or leaves skin behind almost always just needed more time in the same spot, not a different pan.
How to tell it's working
A hot grate makes food hiss the instant it lands, loud enough to notice, and that hiss should hold steady for the first minute rather than fading right away. Color builds from red or pale to deep brown with visible grate marks, and a piece that's ready to flip releases on its own — force needed to pry something free means it isn't done searing yet. Smell shifts from a clean seared or smoky note to something sharper and more acrid the moment fat starts scorching instead of just rendering, which is the signal to pull food off or move it to the indirect side.
Steak, pork, and burgers can be judged by feel once they're through the sear — firm resistance under a poke roughly tracks with how well-done the center is. Chicken can't be judged that way. A thigh can look fully browned and still sit well under a safe internal temperature, and there's no color or texture cue that reliably tells the difference. A thermometer reading 165°F in the thickest part is the only way to know, not a guess based on how dark the skin looks.
Charcoal vs. gas, briefly
Charcoal burns hotter at the coals and drips rendered fat straight onto them, vaporizing it into smoke that settles back on the food and adds flavor a gas flame mostly doesn't. Gas trades some of that for control — burners light in seconds, hold a steady temperature without tending, and adjust with a knob instead of moving food around or adding coals. The actual browning reaction on the food's surface works the same either way; what differs is how much smoke ends up riding along with it.
