Ask what curing does that brining doesn't, and the answer is time — and what that time gets spent on. Brining runs for hours, sometimes a day or two, purely to season meat and firm it up before it goes in the pan soon after. Curing runs for days or weeks toward a different goal: meat that's safe to keep without cooking it, sometimes indefinitely, which is why curing needs an ingredient brining never touches.
Same salt, a different amount of time
Both start the same way — salt against raw meat, reworking its proteins and pulling moisture toward the surface. What happens after that split is the real story, and it isn't about mechanism. It's about arithmetic. A wet brine runs at roughly 5 to 6 percent salt by weight and is finished working within a day. A cure runs concentrated enough, and long enough, to push the meat's water activity — how much of its water is actually available for bacteria to use — down to a level a brine never approaches. That's not a stronger brine. It's a different target entirely.
A quick cure, the kind behind bacon, corned beef, or a ham headed for the oven, still leaves the meat too wet to sit at room temperature, so cooking finishes what the cure started. A long, dry cure — prosciutto, a country ham, most salami — runs weeks to months and pulls out enough water that the meat is stable unrefrigerated and safe to eat raw. Both are curing. Only one of them lets you skip the stove.
Nitrite is curing's ingredient, not brining's
Salt alone can't fully secure a cure, not at the timescales curing runs on and not inside the low-oxygen conditions a sausage casing or a wrapped ham creates. That gap is what nitrite closes. Sodium or potassium nitrite specifically suppresses Clostridium botulinum, the organism that thrives in exactly that airless, slow-curing environment and produces a toxin that salt concentration and cold alone don't reliably stop.
Nitrite does something visible at the same time. It binds to myoglobin and forms a pigment that stays pink even after heat hits it, which is why ham, bacon, and salami keep their color through cooking instead of turning the gray-brown a fresh-cooked roast does. The color isn't decoration. It's a side effect of the same reaction doing the food-safety work, showing up where you can see it.
Curing salt itself is diluted to keep this controllable — a small, fixed percentage of nitrite blended into ordinary salt, then dyed pink or orange so it can't be mistaken for table salt sitting in the container next to it. That color exists because a mix-up at ordinary seasoning quantities would deliver far more nitrite than anyone should get in one sitting.
The dose is the one number you don't approximate
This is the one place curing turns into a real hazard rather than an inconvenience, and it's worth stating plainly: curing without the right salt, or curing at the wrong temperature, is a food-safety problem, not a texture one. Federal regulation sets a ceiling on how much nitrite is allowed into cured meat in the first place — bacon, for instance, is capped at 120 parts per million of ingoing sodium nitrite, or up to 200 ppm for a dry-cured bacon that skips the injection step. A home cure built around a standard 6.25 percent nitrite mix, measured by weight against the meat rather than guessed, is designed to land inside that ceiling. Skipping the scale is how a cure goes from safe to dangerous without looking any different in the bag.
Temperature matters just as much as the dose. Curing has to happen at refrigerator temperature, 40°F (4°C) or below, for its entire run. Cold keeps the process slow enough to control and keeps bacteria from getting ahead of the salt and nitrite before they've had time to work. A cure rushed at room temperature to save a few days isn't a faster version of the same process. It's a different, unsafe one.
Telling a cure apart from one that's stalled
None of this needs a thermometer to track, but it does need a knife. Judge a cure from a cut surface, not from the outside — a cure that's finished looks and smells the same all the way through, not just at the surface.
Color should be even from edge to center: a solid, uniform pink or deep red with no gray or dull patch in the middle. That gray core is the one place undercuring is a safety matter rather than a texture one — it means the center never reached the salt and nitrite level the outside did, so it never got the same protection. Firmness should also be uniform; press the middle the way you'd press the surface, and a soft, springy center on a piece that's supposed to be finished means the cure didn't fully reach it. Smell should stay clean and faintly tangy. A sour, ammonia-like, or sulfurous edge is spoilage, not the cure working harder, and it means the piece gets thrown out rather than cooked through "to be safe."

Reach for a brine when the meat is going in a pan within the day. Reach for curing when the goal is something you can hang, slice cold, and not think about for weeks — and treat the nitrite measurement as the one step in the whole process that doesn't get eyeballed.
