Dessert is the one category where a recipe is closer to a specification than a suggestion. Savoury cooking tolerates improvisation. Baking is a set of ratios, and changing them changes the result whether you meant to or not.

A few things carry across everything here. Weigh flour rather than scooping it — a cup scooped straight from the bag can hold half again as much as a cup spooned in, and that is the usual reason a cake comes out dry. Bring butter and eggs to room temperature when a recipe says to cream them, because cold butter will not hold the air that makes a cake rise. Trust the visual cue over the clock, since domestic ovens run hot or cold by twenty degrees or more.

Beyond that, pick by effort. Custards, poached fruit, mousses and icebox desserts need no oven and mostly need time in the fridge, which makes them the right choice when you are already cooking a dinner. Layer cakes and laminated pastry want an empty afternoon and your full attention.

Sweetness is the easiest thing to overdo. Salt in the batter and acid in the fruit are what stop a dessert tasting one-note.
