Lunch has the tightest constraints of any meal. It gets a short window, often no proper kitchen, and it has to leave you able to work afterwards. That last part matters more than people admit — a heavy, starch-forward lunch buys you an afternoon of staring at the screen.

Most of what works here falls into three shapes. Grain bowls, where a cooked grain, something roasted, something raw and a sharp dressing get assembled cold. Sandwiches, which live or die on the barrier between wet filling and bread: butter, cheese or a leaf of lettuce, applied properly. And leftovers reworked, which is the cheapest lunch there is.

If you are packing it, taste it cold before you decide. Chilling flattens salt and acid, so anything dressed the night before wants more of both than it would need hot from the pan. Keep dressings away from leaves until you eat. Anything fried loses its texture within the hour and is better eaten where it was cooked.

Batch cooking pays off at lunch more than anywhere else. Cook a pot of grains and roast a tray of vegetables on Sunday and four lunches assemble themselves in five minutes each.
