A chalky pot of risotto is almost always still finishable — it just needs more hot stock and more time on the heat. A gluey pot usually isn't, because the starch responsible for the problem is already loose in the liquid, and there's no way to draw it back into the grain. Both failures come from the same reaction running to a different degree: how much starch gets scrubbed off the rice's surface before you stop stirring.
Why stirring, not a sauce, is what makes it creamy
Risotto's creaminess doesn't come from anything poured over the rice. It comes from friction. Constant stirring drags each grain against its neighbors and against the bottom of the pot, wearing down the loose, starch-rich layer that milling leaves on a short-grain rice.
That surface starch dissolves into the hot stock as you go, thickening the liquid around the grains into the glossy suspension that separates good risotto from rice simmered in a lot of broth. The center of each grain stays mostly intact through this — still firm enough to bite, which is the al dente core risotto is supposed to keep even as the outside goes soft.
Chalky risotto hasn't finished cooking yet
A grain of rice gelatinizes from the outside in, the same way any starch does under heat and water — it just has an intact hull's worth of structure to get through before the center catches up. Stop adding stock too early, use too little liquid overall, or run the heat hot enough that stock evaporates faster than a fresh ladle can replace it, and the outside of the grain finishes while the inside never gets hot and wet for long enough to gelatinize.
That's the raw, floury bite people mean by chalky: cooked-looking rice with an undercooked core. It's also the easier of the two failures to fix. Keep the pot at a bare simmer, keep adding stock a half-cup at a time, and taste every few minutes. There's no fixed number of minutes that's actually done — only when the center stops tasting like flour.
Gluey risotto has already released too much starch
Push past that al dente center — through overcooking, too much stirring, or leaving finished risotto sitting in the pot — and the same reaction keeps running past the point that made it creamy. More starch keeps leaching out, the grains themselves go soft and start breaking apart, and the free liquid gets thick enough to glue every grain to its neighbor instead of just coating it.
That's gluey: not too little liquid, but too much dissolved starch relative to how much grain structure is still holding together. Stirring in more hot stock right away can loosen a pot that's just starting to seize, but it can't put starch back inside a grain that has already given it up. Once the rice itself has gone soft and split, thinning the pot only makes a starchy soup instead of restoring the bite that made it risotto.
Short-grain rice is what makes any of this possible
None of this works with the wrong rice. Risotto needs a short-grain variety like arborio or carnaroli, which carries far more of that loose surface starch than a long-grain rice does — without it, stirring has nothing to release in the first place. Fried rice runs the identical reaction backward: it's made from rice cooked and cooled specifically to keep that surface starch locked inside the grain, because a sticky coating is exactly what a hot wok doesn't want.
