Beef stock sets into a loose, trembling gel in the refrigerator because the hours-long simmer dissolves collagen out of bones and connective tissue into gelatin, and gelatin re-forms into a weak protein network once the liquid cools below about 95°F (35°C). That's the whole trick. Broth rarely does it, because broth is built mainly from meat instead of bone and never had enough collagen to begin with.
Collagen is the raw material, gelatin is what you get
Connective tissue is built from collagen, a fibrous protein wound into tight triple-helix strands that hold tendons, cartilage, and joints together while an animal is alive. Raw, it's rubbery enough to be nearly inedible. Hours at a bare simmer — 180°F to 200°F (82°C to 93°C) — is enough heat, applied long enough, to unwind those strands and break them apart into shorter gelatin molecules that dissolve straight into the surrounding water. Nothing about that liquid looks different from bones simmered for twenty minutes. It just has gelatin in it now, and gelatin is what remembers how to become a solid again once the pot goes into the fridge.
What the gelatin buys you at the stove
Reduce a gelatin-rich stock in a pan and it thickens on its own, the way a glaze does, coating the back of a spoon without a spoonful of flour or cornstarch anywhere near it. Gelatin is a much larger molecule than the amino acids and salts that carry flavor, so it changes the mouthfeel of a liquid independent of how strongly it tastes. This is really the whole difference between stock and broth — not a rule about salt, or which vegetables went into the pot, but whether the liquid was simmered long enough, from the right bones, to pick up gelatin in the first place.
Why knuckles and joints beat a meaty roast bone
Collagen isn't spread evenly through an animal. It's concentrated in the parts that did mechanical work — knuckles, feet, neck bones, oxtail, the cartilage-heavy ends of long bones — and nearly absent from a center-cut marrow bone, which is mostly fat wrapped around a hollow shaft. Fat doesn't hydrolyze into gelatin no matter how long it simmers. Neither does the muscle protein in a meaty roast bone; it makes the stock taste better without doing anything for the set. A stock built entirely from marrow bones and meat scraps can taste excellent and still refuse to gel, because the one ingredient that actually forms the gel was never in the pot — getting a stock that actually sets means working knuckles, feet, or oxtail in alongside it.
A hard boil undoes some of that work
A rolling boil doesn't stop gelatin from forming, but it wrecks everything else about the stock while it's at it. Violent bubbling beats rendered fat into droplets too small to rise and pool on the surface, so they stay suspended through the liquid instead — that's what turns a stock cloudy and leaves it tasting greasy rather than clean. A bare simmer, barely breaking the surface at one edge of the pot, keeps the fat separate enough to skim off and still lets the collagen dissolve just as completely.
Why a carton of stock from the store never sets
Most cartons on the shelf are formulated to be poured, not spooned, and a gelled liquid behind clear packaging reads as spoiled to a shopper who's never seen homemade stock set. That pushes manufacturers toward a thinner ratio of bones to water and a shorter cook, and the two words — stock and broth — end up used almost interchangeably on the label as a result. The chilled spoonful in your own fridge tells you more than either word does.
