Pesto turns brown because crushing basil ruptures cells that normally keep an enzyme called polyphenol oxidase walled off from the leaf's own phenolic compounds, and the instant air reaches that mixture, the enzyme starts oxidizing them into brown pigments — the same reaction that darkens a cut apple or a bruised avocado. Pesto is built to be eaten within a day or two of pounding, tossed raw over hot pasta, spooned onto grilled fish, or spread cold on bread, and that short life is exactly why almost nobody notices the same reaction happening slowly in a whole, uncut basil plant.
What breaks open when the knife or pestle hits
A basil leaf keeps its enzyme, its phenolic compounds, and its chlorophyll in separate compartments while it's intact, the same way a whole potato or an unpeeled pear does. Pounding or blending breaks those walls open and lets everything mix at once. Within seconds, the enzyme starts turning the phenolics brown, and that reaction is what the rest of the process is a race against.
At the same time, dozens of tiny oil glands on the leaf's surface rupture too, releasing the aromatic compounds — mostly linalool and eugenol — that give basil its actual smell, which is nothing like the flat, grassy taste of a whole uncut leaf. Those compounds are fat-soluble, not water-soluble. Olive oil isn't simply a lubricant for the paste. It's the only ingredient in the bowl able to hold onto them.
The ratio pesto is built on
Genovese pesto is built on a ratio, not a fixed recipe: for roughly two cups of packed basil leaves, work in about a third of a cup of pine nuts, half a cup of finely grated parmesan, half a cup of olive oil, and two cloves of garlic, then salt to taste. Keep those five in that rough proportion and basil is the only amount that has to change to make more or less.
Each one is doing a job beyond flavor. Oil is the emulsion's continuous phase — it coats every fragment of ruptured leaf, which is what excludes the air oxidation depends on, and it carries the aroma compounds released above. Parmesan's proteins and fat help hold that emulsion together so the sauce clings instead of splitting into a puddle of green oil. Pine nuts add more fat, plus enough body to thicken the paste without diluting flavor the way more oil alone would. If a batch turns out too oily, too thin, or too sharp with garlic, that's the ratio telling you which ingredient to adjust next time, not a reason to start over.
Why a mortar stays greener than a blender
A mortar crushes leaf cells by folding them against stone under steady pressure, which ruptures them with almost no air mixed in and generates no meaningful heat. A blender or food processor does the opposite on both counts: the blade spins fast enough to whip air bubbles through the paste and warm it several degrees by friction alone, sometimes measurably warm to the touch within thirty seconds.
That matters because the enzyme responsible for browning works faster with both more oxygen and more heat, roughly doubling its reaction rate for every 18°F (10°C) the paste warms. Heat also drives a second, separate change: chlorophyll loses the magnesium ion at the center of its molecule and turns into pheophytin, a dull olive pigment, and that conversion speeds up further in the presence of acid — which a paste with raw garlic already has plenty of.
None of this reverses once it's happened. Pulsing in short bursts, chilling the bowl and the basil beforehand, and stopping the machine the moment the leaves are broken down rather than pureed smooth are the entire defense, because they're the only variables actually slowing either reaction.
