There's no single trick for a thin sauce. There are three: take water out of it, add something that binds the water still in it, or suspend fat or solids through it so the liquid can't flow as freely. Which one to reach for has less to do with the sauce itself and more to do with how much time is left and how rich the dish already is.
Every route raises viscosity one of three ways
Thin and thick describe the same thing physically — how much resistance a liquid puts up when something moves through it. Water offers almost none. A sauce is water carrying more stuff: dissolved gelatin, swollen starch granules, droplets of fat. Reduction raises the ratio of stuff to water by removing water. Starch raises it by trapping water inside swollen granules. Butter, cream, and purée raise it by adding a second substance the liquid now has to move around instead of through. Same result, three different levers.

Reduction concentrates whatever's already dissolved
Boiling a sauce down doesn't add anything. It removes water, and everything already dissolved in it — gelatin from a stock, sugar from wine, the salt from seasoning it too early — gets more concentrated as the volume drops. Gelatin-rich stocks thicken almost entirely this way: as water leaves, the long collagen-derived molecules have less room to move and start tangling into each other, which is why a good demi-glace needs no flour at all. A stock-based pan sauce reduced by half tastes noticeably more intense than it did in the pan. Season at the end of a reduction, not the start, or the salt concentrates right along with the water and the sauce ends up oversalted before it's even done.
Starch is the fastest fix, and the blandest one
A roux or a slurry works quicker than reduction because it doesn't wait for water to evaporate — it works by trapping the water that's already there. Swollen starch granules hold water inside a network as they gelatinize, and that network takes up more room than free liquid did, so the sauce visibly thickens within a minute or two of the starch hitting hot liquid. What it doesn't do is add flavor. Cornstarch and flour contribute almost nothing on their own, so a heavy-handed dose of either dilutes a delicate sauce about as much as it thickens it — more volume of something that doesn't taste like anything.
Butter and cream thicken by suspending fat, not by losing water
Whisking cold butter into a sauce off the heat — mounting it, or monter au beurre in the classic term — breaks the butter into tiny fat droplets that scatter through the liquid instead of melting into a pool on top. Those droplets get in the way of the liquid flowing past itself, the same reason mayonnaise is thick despite being made from two thin ingredients. Cream does something similar, and thickens further if simmered down, since cream is mostly water to begin with. Both add real richness rather than concentrating what's already there, and both can come apart under too much heat or too fast a whisk, separating into a slick and a puddle instead of staying suspended.
A purée thickens with whatever's already cooked
Blending part of a braise's vegetables back into its own liquid, or stirring in a spoonful of potato or roasted garlic, thickens a sauce with solid matter rather than dissolved or emulsified matter. There's no gelatinization and no emulsion involved. It's just more stuff — plant cell walls and pulp — taking up space in every spoonful. The cost is that it isn't neutral the way starch is. Whatever gets puréed becomes a flavor in the sauce, not just a thickener, so it only works when that flavor already belongs there.
How to tell it's ready without a thermometer
None of these routes has a temperature that means "done." Thickness is a texture, not a number, and the only reliable test is watching the sauce itself. Dip a spoon in and run a finger down the back of it. If the line holds its edges and the sauce doesn't rush back in to fill it, the sauce has reached nappe — thick enough to coat the spoon in a clinging film rather than sheet off in a rush. Short of that, a thin sauce runs off a lifted spoon almost like water and looks glassy rather than glossy. Smell is a smaller tell but a real one: a roux or slurry that still smells sharply of raw flour or cornstarch hasn't finished cooking yet, no matter how thick it already looks.
