Eggplant Caponata

Eggplant Caponata

Eggplant Caponata

Silky-roasted eggplant cubes mingle with glossy tomatoes, briny capers and chopped olives for a balance of sweet, tangy and savory textures. Toasted pine nuts add crunch while fresh herbs brighten each bite; serve warm or at room temperature for best flavor. This one-pan cooked vegetable relish develops deeper complexity if allowed to rest overnight.

Swap-ins are straightforward: use golden raisins or chopped dried apricots if you prefer a fruitier note, and swap slivered almonds for pine nuts for a budget-friendly crunch. For a lighter finish, omit the toasted nuts and stir in extra fresh herbs just before serving. A splash of balsamic vinegar in place of red wine vinegar lends a darker, sweeter tang.

Serve as a bruschetta topping on toasted bread, alongside grilled fish or roasted meats, or spoon over creamy polenta or simple couscous for an easy weeknight dinner. Make-ahead friendly and excellent for picnics or potlucks—the flavor improves after a day in the refrigerator. Store in an airtight container up to 4 days.

How to Make It

  1. 1

Preheat the oven to 220°C (425°F). Line a baking sheet with parchment.

  2. 2

Cut the eggplants into 2–3 cm (3/4–1 inch) cubes. Toss with 2 tablespoons olive oil and 1/2 teaspoon salt on the baking sheet and roast until deeply browned and tender, 25–30 minutes, turning once.

  3. 3

Meanwhile, heat the remaining 2 tablespoons olive oil in a large skillet over medium heat. Add the onion and celery and sauté until soft and starting to color, about 6–8 minutes.

  4. 4

Add chopped tomatoes and tomato paste to the skillet; cook until the tomatoes break down, about 6 minutes. Pour in the water, red wine vinegar and sugar, stir to combine and simmer gently for 4–5 minutes.

  5. 5

Stir in the capers, chopped olives, and toasted pine nuts; season with 1 teaspoon salt and 1/2 teaspoon black pepper. Simmer 2–3 minutes to let flavors meld.

  6. 6

Fold the roasted eggplant into the skillet and cook together for 2 minutes to warm through and marry flavors. Remove from heat and stir in lemon juice, parsley and basil.

  7. 7

Taste and adjust seasoning—add a drizzle of olive oil or another splash of vinegar if you want more brightness. Let cool to room temperature or chill; caponata can be served warm or cold.

  8. 8

Transfer to an airtight container and refrigerate if not serving immediately. Bring to room temperature before serving to allow flavors to open.
