Shocking answers exactly one problem: heat that keeps cooking food after it leaves the pot. That's the whole job. It stops a green bean from finishing five shades past bright, and it stops a soft-boiled egg from turning hard in the minute after you drain it. What it can't do is undo a color that heat and acid already stripped away, or un-mush a vegetable that spent too long in the boil before anyone reached for the ice.

Why the pot doesn't let go right away

Food keeps cooking for a while after it leaves the heat — the outside is still hotter than the center, and that heat keeps moving inward until the two even out. That's carryover cooking, and it's the whole reason blanched vegetables and soft-boiled eggs need a stop switch at all.

Ice water is the fastest way to pull that heat back out. A bigger gap between the food's temperature and the water's temperature moves heat faster, and water carries heat away from a surface far more efficiently than air does. That's the entire mechanism. It's a heat sink, not a chemical fix, and it can only act on heat that hasn't finished its work yet.

The color that isn't coming back

Bright green in a vegetable comes from chlorophyll, and chlorophyll breaks down in a specific way: heat and acid together pull the magnesium ion out of its center and replace it with hydrogen, turning it into a dull olive-brown compound. Heat alone does this slowly. Heat plus acid does it fast — and vegetables release their own mild acids as they cook, acids that build up in a covered pot instead of escaping into the kitchen.

Once that reaction has run its course, shocking doesn't touch it. The ice bath stops more heat from reaching the vegetable, but the magnesium that already left the chlorophyll isn't coming back for a swim in cold water. Grey or olive-drab broccoli is that reaction, finished. The fix lives entirely in the pot that came before: cook it uncovered, cook it fast, and don't let it sit in hot water a minute longer than it needs to.

Limp beans and mushy greens

Texture loss runs on a separate mechanism, and it's also mostly decided before the ice bath. Heat breaks down pectin, the substance holding plant cell walls rigid, and it ruptures the membranes that keep water pressurized inside each cell. That pressure is what makes a raw green bean snap instead of bend. Once the pectin is gone and the pressure is gone, a vegetable is limp, and no amount of cold water puts either one back.

What shocking does get credit for is stopping that breakdown from going any further. A bean pulled a little underdone and shocked right away keeps pressure it would otherwise lose over the next thirty seconds in a hot pot. The same bean left boiling that extra thirty seconds comes out exactly as limp as it went into the ice water — the bath just locks in whatever state the vegetable was already in.

Blanched greens that turn to mush in the squeeze are usually this same failure at a smaller scale. Spinach and chard have so little structure to begin with that a few seconds too long in the boil is the difference between tender and disintegrating, and squeezing water out of cell walls that are already broken finishes the job.

Eggs that fight you at the shell

Peeling runs on its own logic, and shocking only half-controls it. As an egg cools quickly, the white contracts a little faster than the shell does, opening a thin gap between the shell's inner membrane and the white — that gap is what lets a shell come away in big pieces instead of tearing off with the egg attached. A short or half-hearted ice bath doesn't open enough of that gap, so shells still stick even on a fully cooked egg.

But a fast, thorough shock can't overcome a fresh egg either. Very fresh whites sit at a lower pH, and at that pH the white bonds more tightly to the shell's membrane no matter how cold the water is. That's why eggs a week or two old peel more reliably than eggs bought yesterday — the chemistry of the white has had time to shift, and no ice bath substitutes for it.

Pasta that won't take a sauce

Shocking is the wrong move for pasta almost every time. Pasta water carries starch the noodles released while cooking, and that starch is what lets a sauce cling instead of pooling at the bottom of the bowl. Running the pasta under cold water sends that starch down the drain, and cooling the noodles below serving temperature stiffens any fat in the sauce — butter and olive oil both cling worse once they're heading back toward solid.

Drain the pasta and move it straight into the sauce. The one exception is pasta headed for a cold salad, where sticking to a hot sauce was never the goal in the first place.

When shocking works against you

A shocked vegetable is a wet vegetable, and wet food doesn't brown. If a blanched vegetable is headed for a hot pan or the oven afterward — green beans finished in butter, broccoli roasted for char — pat it dry first, or skip the ice bath and let it cool on a tray instead. Sight and feel tell you more than a clock does. A vegetable should hit its brightest color in the boiling water — pull it the moment that color peaks, not after.
